Ingredients

  • 2 cups long grain rice, washed
  • 1 can (400ml) coconut milk
  • 1 cup water
  • 1 small onion, finely diced
  • 1 tsp salt
  • 1 bay leaf
  • 1/2 tsp nutmeg

Instructions

  1. 1 Rinse rice until water runs clear.
  2. 2 Combine coconut milk and water in a pot, add onion, bay leaf, and nutmeg.
  3. 3 Bring to a boil, add rice and salt.
  4. 4 Stir once, reduce heat to very low, cover tightly.
  5. 5 Cook 20-25 minutes until rice is tender and liquid absorbed.
  6. 6 Remove bay leaf, fluff with a fork and rest 5 minutes before serving.
