Thinly sliced fresh heart of palm dressed with lime vinaigrette, onion, and herbs, the iconic luxury salad of the Seychelles.

Ingredients

  • 400g fresh heart of palm, thinly sliced
  • 1 small onion, thinly sliced into rings
  • 1 tomato, diced
  • Juice of 2 limes
  • 3 tbsp olive oil
  • 1 small chilli, finely sliced
  • Salt and pepper
  • Fresh parsley or coriander

Instructions

  1. 1 Slice the heart of palm into thin rounds using a very sharp knife.
  2. 2 Arrange on a serving plate with onion rings and diced tomato.
  3. 3 Whisk together lime juice, olive oil, salt, and pepper to make a vinaigrette.
  4. 4 Drizzle vinaigrette over the salad and scatter chilli slices on top.
  5. 5 Garnish with fresh herbs and serve immediately.
