Slice the heart of palm into thin rounds using a very sharp knife.

Arrange on a serving plate with onion rings and diced tomato.

Whisk together lime juice, olive oil, salt, and pepper to make a vinaigrette.

The Story Behind Salade Palmiste
Salade palmiste is the most celebrated starter in Seychellois gastronomy and one of the most exclusive salads in the world. Because harvesting the tender core of the coconut palm kills the tree, this dish was historically reserved for the wealthiest planters and most special occasions. Today, sustainable palm farming has made it more accessible, but it retains its status as a symbol of Seychellois culinary prestige.
