Chewy coconut sweets made from grated fresh coconut cooked with sugar, vanilla, and food colouring, a traditional Seychellois festival treat.

Ingredients

  • 300g fresh coconut, finely grated
  • 250g sugar
  • 100ml water
  • 1 tsp vanilla extract
  • Food colouring (pink or green, optional)
  • Pinch of salt

Instructions

  1. 1 Combine sugar and water in a heavy saucepan. Stir over medium heat until sugar dissolves completely.
  2. 2 Add grated coconut, vanilla, and salt. Stir continuously.
  3. 3 Cook on medium heat, stirring constantly, for fifteen to twenty minutes until mixture thickens and pulls away from the sides.
  4. 4 Add a few drops of food colouring if desired and mix through evenly.
  5. 5 Spoon onto parchment paper in small mounds. Let cool completely until firm and chewy.
