Combine sugar and water in a heavy saucepan. Stir over medium heat until sugar dissolves completely.

Add grated coconut, vanilla, and salt. Stir continuously.

Cook on medium heat, stirring constantly, for fifteen to twenty minutes until mixture thickens and pulls away from the sides.

Add a few drops of food colouring if desired and mix through evenly.

Spoon onto parchment paper in small mounds. Let cool completely until firm and chewy.
