A moist, dense banana cake flavoured with vanilla and cinnamon, baked until golden and served as a teatime treat across the Seychelles.

Ingredients

  • 4 very ripe bananas, mashed
  • 250g flour
  • 150g sugar
  • 100g butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tsp baking powder

Instructions

  1. 1 Preheat oven to 180C. Grease and flour a loaf pan.
  2. 2 Mash bananas in a large bowl until smooth. Add melted butter and sugar, mix well.
  3. 3 Beat in eggs one at a time. Add vanilla extract.
  4. 4 In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. 5 Fold dry ingredients into banana mixture until just combined. Do not overmix.
  6. 6 Pour into prepared pan. Bake forty to forty-five minutes until a skewer comes out clean. Cool before slicing.
