Serbian Cornbread

A dense, moist, golden cornbread enriched with feta cheese and yogurt, with a satisfying crumbly texture and savory tang.

Ingredients

  • 300g fine cornmeal
  • 200g feta cheese, crumbled
  • 200ml plain yogurt
  • 3 eggs
  • 100ml sunflower oil
  • 200ml sparkling mineral water
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. 1 Preheat oven to 200C. Grease a baking pan with oil.
  2. 2 Whisk eggs, yogurt, oil, and sparkling water together.
  3. 3 Mix cornmeal, baking powder, and salt. Add wet ingredients and stir until smooth.
  4. 4 Fold in crumbled feta cheese.
  5. 5 Pour batter into pan and smooth the top.
  6. 6 Bake 30-35 minutes until golden on top and a toothpick comes out clean. Cut into squares.
