Serbian Baked Beans

Slowly baked white beans with caramelized onions and sweet paprika, developing a rich, golden crust over a creamy, savory interior.

Ingredients

  • 500g dried white beans, soaked overnight
  • 3 large onions, thinly sliced
  • 3 tbsp sunflower oil
  • 2 tbsp sweet paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tsp dried savory or thyme

Instructions

  1. 1 Cook soaked beans in fresh water until just tender, about 45 minutes. Drain, reserving 500ml cooking liquid.
  2. 2 Saute sliced onions in oil over medium heat for 15-20 minutes until deeply caramelized and golden.
  3. 3 Stir paprika into the onions, cook 1 minute.
  4. 4 Layer beans and caramelized onions alternately in an oiled baking dish. Add bay leaves and herbs.
  5. 5 Pour reserved bean liquid over until just visible. Season with salt and pepper.
  6. 6 Bake at 180C for 1.5-2 hours, checking occasionally, until top is golden and crusty. Add water if too dry.
