Coconut Lamington Cubes

Soft sponge cake cubes soaked in chocolate sauce and rolled in desiccated coconut — Serbia's most beloved and whimsical petit four.

Ingredients

  • 5 eggs
  • 150g sugar
  • 150g all-purpose flour
  • 50g cornstarch
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • For chocolate coating: 200g dark chocolate
  • 200ml milk
  • 50g butter
  • 200g desiccated coconut for rolling

Instructions

  1. 1 Beat eggs and sugar until thick and pale, about 8 minutes. Fold in sifted flour, cornstarch, and baking powder.
  2. 2 Pour into a greased and lined baking pan. Bake at 180C for 20-25 minutes until springy.
  3. 3 Cool completely, then cut into 3cm cubes.
  4. 4 Melt chocolate with milk and butter to make a smooth coating sauce. Cool slightly.
  5. 5 Dip each cube into chocolate sauce using two forks, then roll immediately in desiccated coconut.
  6. 6 Place on a wire rack to set. Refrigerate 1 hour before serving.

Did You Know?

The name cupavci means "shaggy ones" in Serbian, referring to the fluffy coconut coating that makes them look like tiny furry creatures.
