Ingredients

  • 500g beef, cubed
  • 1 cup smooth peanut butter
  • 3 tomatoes, blended
  • 2 tbsp tomato paste
  • 1 onion, chopped
  • 2 sweet potatoes, cubed
  • 1 cup pumpkin, cubed
  • 2 scotch bonnet peppers
  • 1/4 cup vegetable oil
  • 2 bouillon cubes
  • Salt to taste
  • 1L water

Instructions

  1. 1 Season and brown beef in oil. Add onion and cook until softened.
  2. 2 Add tomato paste and blended tomatoes. Cook 10 minutes.
  3. 3 Dissolve peanut butter in warm water and add to the pot, stirring to prevent lumps.
  4. 4 Add bouillon cubes, scotch bonnet, and salt. Simmer 20 minutes.
  5. 5 Add sweet potato and pumpkin. Cook 20 more minutes until vegetables are tender and sauce is thick.
  6. 6 Serve over steamed white rice.
