A creamy, tangy, milkshake-like drink made from the powdery fruit pulp of the baobab tree, sweetened and served ice-cold.

Ingredients

  • 200g baobab fruit pulp (pain de singe)
  • 1L cold water
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup coconut milk (optional)
  • Ice for serving

Instructions

  1. 1 Soak baobab fruit pulp in water for 10 minutes, breaking it apart with your hands.
  2. 2 Strain through a fine sieve, pressing to extract all the creamy liquid. Discard seeds and fibers.
  3. 3 Add sugar and vanilla. Stir until dissolved.
  4. 4 For extra creaminess, blend in coconut milk.
  5. 5 Chill thoroughly and serve over ice.
  6. 6 Stir before serving as it settles naturally.
