Potato, Cabbage & Cheese Bake

A bubbling bake of mashed potato, buttered cabbage, and melted cheddar — the Scottish Borders' answer to Irish colcannon.

Ingredients

  • 500g potatoes, peeled and cubed
  • 300g cabbage or kale, shredded
  • 1 onion, sliced
  • 50g butter
  • 100g mature cheddar, grated
  • Salt and pepper
  • 2 tbsp chives, chopped

Instructions

  1. 1 Boil potatoes until tender. Drain and mash with half the butter.
  2. 2 Sauté cabbage and onion in remaining butter for 5 min until softened.
  3. 3 Combine mashed potato with cabbage and onion. Season well.
  4. 4 Transfer to a buttered baking dish. Top with grated cheddar.
  5. 5 Bake at 190°C (375°F) for 20-25 min until golden and bubbling.
