Instructions

Boil potatoes until tender. Drain and mash with half the butter.

Sauté cabbage and onion in remaining butter for 5 min until softened.

Combine mashed potato with cabbage and onion. Season well.

Transfer to a buttered baking dish. Top with grated cheddar.

Bake at 190°C (375°F) for 20-25 min until golden and bubbling.

The Story Behind Rumbledethumps
Rumbledethumps is a traditional dish of the Scottish Borders, closely related to Irish colcannon and English bubble and squeak. Each of these Celtic and British dishes combines potatoes with brassicas, but the Scottish version distinguishes itself with the addition of cheese baked on top. It was historically a way to use leftover vegetables and potatoes.
