Ingredients
4 green plantains, peeled and chunked
1 onion, diced
3 cloves garlic, minced
1 liter fish stock
1 tbsp palm oil
Salt and pepper
Cilantro for garnish
Instructions
1Heat palm oil in a pot. Saute onion and garlic until softened.
2Add plantain chunks and fish stock. Bring to a boil.
3Simmer 25 min until plantains are very soft.
4Blend until completely smooth. Adjust consistency with water if needed.
5Season with salt and pepper. Serve garnished with cilantro.
