Ingredients

  • 100g Sao Tomean cacao nibs or dark chocolate (85%+), chopped
  • 3 cups whole milk
  • 1/4 cup sugar (or to taste)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract

Instructions

  1. 1 If using cacao nibs, toast them in a dry skillet over medium heat for three minutes until fragrant and slightly darkened. Grind the toasted nibs in a spice grinder or mortar until you have a coarse powder. This step unlocks the deep, complex chocolate flavour.
  2. 2 Combine the ground cacao or chopped dark chocolate with one cup of the milk in a small saucepan. Heat over low heat, stirring constantly, until the chocolate melts completely and forms a smooth, thick paste with no visible lumps remaining.
  3. 3 Add the remaining two cups of milk gradually while stirring constantly. Increase the heat to medium and bring to a gentle simmer. Add the sugar, cinnamon, nutmeg, and salt, stirring until the sugar dissolves completely.
  4. 4 Simmer the hot chocolate for five minutes, whisking occasionally, until it is hot, frothy, and the spices are well infused. The beverage should be rich and thick, coating the back of a spoon, but still pourable and drinkable.
