Grilled Sea Snails

Large sea snails harvested from rocky island shores, marinated in lime and garlic, then grilled in their shells until tender and smoky.

Ingredients

  • 1kg large sea snails in shells
  • Juice of 4 limes
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 malagueta pepper, minced
  • Salt
  • Fresh cilantro, chopped

Instructions

  1. 1 Clean snails thoroughly and soak in salted water for 1 hour.
  2. 2 Mix lime juice, garlic, olive oil, malagueta pepper, and salt.
  3. 3 Drain snails and toss with half the marinade. Rest 20 min.
  4. 4 Grill snails in shells over high heat for 8-10 min until flesh is firm.
  5. 5 Drizzle remaining marinade over grilled snails. Garnish with cilantro.
  6. 6 Serve hot in shells with toothpicks for extracting the meat.
