A dense, fudgy chocolate cake made with locally grown single-origin cacao, sweetened with raw sugar and enriched with coconut milk β€” the islands' ultimate dessert.

Ingredients

  • 200g Sao Tome dark chocolate (70%), chopped
  • 250g wheat flour
  • 200g raw sugar
  • 200ml coconut milk
  • 100ml vegetable oil
  • 3 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cocoa powder for dusting

Instructions

  1. 1 Melt chocolate in a double boiler or microwave. Let cool slightly.
  2. 2 Whisk eggs and sugar until pale and thick, about 3 min.
  3. 3 Add melted chocolate, coconut milk, oil, and vanilla. Mix well.
  4. 4 Fold in flour, baking powder, and salt until just combined.
  5. 5 Pour into a greased and floured 24cm round cake pan.
  6. 6 Bake at 175Β°C for 35-40 min until a skewer comes out with moist crumbs.
  7. 7 Cool in pan 10 min, then turn onto a wire rack.
  8. 8 Dust with cocoa powder before serving.
