Vessel: cake plate, sliced
Garnishes: chocolate drizzle, hazelnut pieces

Instructions
-
1
Make the wafer batter by whisking the eggs, sugar, and vanilla until pale and fluffy. Add the melted butter and fold in the flour until smooth. The batter should be thin and spreadable, similar to crepe batter in consistency.
-
2
Heat a wafer iron or crepe pan over medium heat and grease lightly. Pour thin layers of batter and cook for one to two minutes per side until golden and crisp. You need at least seven to nine thin, crisp wafer layers. Let each cool completely on a wire rack.
-
3
Melt the three hundred grams of dark chocolate in a double boiler until smooth. Combine with the hazelnut or chocolate cream, stirring until unified and glossy. This chocolate-hazelnut filling is spread between each crispy wafer layer.
-
4
Assemble the torta by placing one wafer layer on a flat surface and spreading a thin, even layer of the chocolate-hazelnut filling over it. Place another wafer on top and repeat until all layers are used, pressing gently after each addition.
-
5
Melt the remaining one hundred grams of chocolate and pour over the top and sides of the assembled torta, smoothing with a spatula to create an even coating. Sprinkle the chopped toasted hazelnuts over the top before the chocolate sets.
-
6
Refrigerate the torta tre monti for at least two hours until the chocolate sets firm and the layers bond together. Slice with a sharp knife into small squares or rectangles. This layered chocolate wafer cake is San Marino's national dessert, named after the republic's three peaks.

The Story Behind Torta Tre Monti
The Story: Torta Tre Monti, the Cake of Three Mountains, is San Marino's most iconic dessert, a layered confection of thin wafer rounds sandwiched with hazelnut cream and chocolate, then coated in a shell of dark chocolate. The three layers symbolize the three towers of La Guaita, La Cesta, and Il Montale that crown the three peaks of Mount Titano and appear on the republic's coat of arms. The cake was developed in the twentieth century as a national symbol, combining the Italian tradition of layered wafer confections with distinctly Sammarinese patriotic symbolism.
On the Calendar: Torta Tre Monti is served at national celebrations, particularly the Feast of Saint Marinus on September 3rd and the Anniversary of the Republic on February 5th. It is also a popular souvenir and gift, sold in bakeries and shops throughout the republic.
Then and Now: Originally a specialty of a few bakeries, Torta Tre Monti has become commercially produced and widely available, though artisanal versions from traditional pasticcerie remain superior. The cake has become San Marino's most recognizable culinary export and a symbol of national identity.
Legacy: Torta Tre Monti is edible patriotism, a dessert that transforms San Marino's iconic silhouette into chocolate and hazelnut, reminding every citizen and visitor of the republic's remarkable endurance.
