A soft, lightly sweet ring cake perfumed with lemon and anise, dunked in sweet wine at breakfast or afternoon tea.

Ingredients

  • 350g all-purpose flour
  • 150g sugar
  • 3 eggs
  • 100ml sunflower oil
  • 100ml milk
  • Zest of 2 lemons
  • 1 tsp anise extract or anise seeds
  • 16g baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. 1 Whisk eggs and sugar until pale and fluffy, about 3 minutes.
  2. 2 Add oil, milk, lemon zest, and anise. Whisk to combine.
  3. 3 Sift flour, baking powder, and salt together. Fold gently into the wet mixture until just combined.
  4. 4 Pour batter into a greased and floured ring pan.
  5. 5 Bake at 175Β°C for 35-40 minutes until golden and a skewer comes out clean.
  6. 6 Cool in pan 10 minutes, turn out, and dust generously with powdered sugar.
