Whole breadfruit roasted in the umu earth oven until the exterior chars and the interior becomes creamy and starchy, with a flavor between potato and fresh bread.

Ingredients

  • 1 whole breadfruit (about 1.5 kg)
  • Coconut cream for serving
  • Salt

Instructions

  1. 1 Select a breadfruit that is firm with some give when pressed.
  2. 2 If using umu, place whole breadfruit directly on hot stones. If using oven, bake at 190C.
  3. 3 Roast 45-60 min, turning occasionally, until skin is charred and a skewer slides in easily.
  4. 4 Let cool slightly. Cut in half and remove the core.
  5. 5 Slice into wedges and serve with coconut cream and salt.
