Yuca Frita

Golden-fried cassava sticks served crispy on the outside and fluffy inside, accompanied by curtido slaw and tomato salsa. A beloved Salvadoran street food.

Ingredients

  • 1kg yuca, peeled and cut into sticks
  • Vegetable oil for frying
  • Salt to taste
  • Curtido for serving
  • Tomato salsa for serving

Instructions

  1. 1 Boil yuca in salted water until tender but still firm, about twenty minutes. Drain and let cool slightly.
  2. 2 Remove the fibrous core from each piece. Cut into thick sticks about the size of large french fries.
  3. 3 Heat oil to 180C in a deep pot. Fry yuca sticks in batches until golden and crispy, about five minutes per batch.
  4. 4 Drain on paper towels and season with salt immediately while still hot. Serve with curtido and tomato salsa.
