Chicken pieces marinated in local green seasoning, browned until deeply caramelized, then stewed in a rich gravy with onions and tomatoes. A weeknight staple.

Ingredients

  • 1kg chicken pieces
  • 3 tbsp green seasoning paste
  • 2 tbsp browning sauce
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 tbsp ketchup
  • 2 tbsp vegetable oil
  • 250ml water
  • Salt and black pepper
  • 1 tsp sugar for caramelizing

Instructions

  1. 1 Season chicken with green seasoning, garlic, salt, and pepper. Marinate at least 30 minutes.
  2. 2 Heat oil in a heavy skillet. Add sugar and let it caramelize to a dark brown.
  3. 3 Add chicken pieces and sear until deeply browned on all sides.
  4. 4 Add onion, tomatoes, browning sauce, ketchup, and thyme.
  5. 5 Add water, cover, and simmer 30 minutes until chicken is tender.
  6. 6 Uncover and let sauce reduce and thicken for 5 minutes.
  7. 7 Serve with rice and provisions.
