Ingredients

  • 400g all-purpose flour
  • 150g grated fresh coconut
  • 100g brown sugar
  • 100g raisins
  • 200ml coconut milk
  • 60g butter, melted
  • 2 eggs, beaten
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp mixed spice
  • 1/2 tsp nutmeg
  • Pinch of salt

Instructions

  1. 1 Preheat oven to 175C. Grease a loaf pan.
  2. 2 Mix flour, baking powder, mixed spice, nutmeg, and salt in a large bowl.
  3. 3 Add grated coconut, raisins, and brown sugar. Mix well.
  4. 4 Combine coconut milk, melted butter, eggs, and vanilla extract.
  5. 5 Pour wet ingredients into dry and mix until just combined.
  6. 6 Pour batter into prepared loaf pan.
  7. 7 Bake 50-60 minutes until golden brown and a skewer comes out clean. Cool before slicing.
