Ingredients
400g all-purpose flour
150g grated fresh coconut
100g brown sugar
100g raisins
200ml coconut milk
60g butter, melted
2 eggs, beaten
2 tsp baking powder
1 tsp vanilla extract
1 tsp mixed spice
1/2 tsp nutmeg
Pinch of salt
Instructions
1Preheat oven to 175C. Grease a loaf pan.
2Mix flour, baking powder, mixed spice, nutmeg, and salt in a large bowl.
3Add grated coconut, raisins, and brown sugar. Mix well.
4Combine coconut milk, melted butter, eggs, and vanilla extract.
5Pour wet ingredients into dry and mix until just combined.
6Pour batter into prepared loaf pan.
7Bake 50-60 minutes until golden brown and a skewer comes out clean. Cool before slicing.
