The Story Behind Banana Fritters
Banana fritters are inextricably linked to Saint Lucia's banana industry, which dominated the island's economy for decades. When bananas ripened too quickly for export, resourceful cooks transformed them into these sweet fritters. The French beignet technique merged perfectly with the tropical fruit, creating a snack that celebrates both the island's colonial and agricultural heritage. Even as the banana industry has declined, the fritters remain a beloved treat.
