Crispy deep-fried fritters made with salted codfish, flour, and fiery Scotch bonnet pepper. A beloved street food and party snack across Saint Lucia.

Ingredients

  • 200g salted codfish, soaked and flaked
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 Scotch bonnet pepper, finely minced
  • 3 chives, chopped
  • 2 cloves garlic, minced
  • 150ml water
  • Oil for deep frying
  • Salt to taste

Instructions

  1. 1 Soak saltfish overnight, boil 10 minutes, drain, and flake finely.
  2. 2 Mix flour, baking powder, and salt in a bowl.
  3. 3 Add flaked fish, Scotch bonnet, chives, and garlic. Mix well.
  4. 4 Add water gradually to form a thick batter.
  5. 5 Heat oil to 175C. Drop spoonfuls of batter into hot oil.
  6. 6 Fry until golden brown and crispy, about 3-4 minutes per batch.
  7. 7 Drain on paper towels and serve hot.
