Tender goat meat marinated in garlic, ginger, and citrus, then grilled over charcoal until smoky and succulent, a celebration centerpiece.

Ingredients

  • 1.5 kg goat leg, cut into pieces
  • 4 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • Juice of 2 limes
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin

Instructions

  1. 1 Combine garlic, ginger, lime juice, oil, salt, pepper, and cumin into a marinade paste.
  2. 2 Coat goat pieces thoroughly with marinade, cover, and refrigerate for at least one hour or overnight.
  3. 3 Prepare a charcoal grill to medium-high heat, letting coals develop a white ash coating.
  4. 4 Grill goat pieces for eight to ten minutes per side, turning once, until charred outside and cooked through.
  5. 5 Rest meat for five minutes before serving on a platter with roasted vegetables.
