Ingredients

  • 1 cup cooked red beans
  • 1 cup corn kernels
  • 2 cups chopped spinach or amaranth greens
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 2 cups water

Instructions

  1. 1 Heat oil in a large pot and sauté onion for five minutes until softened.
  2. 2 Add tomatoes and cook for three minutes until broken down.
  3. 3 Add cooked beans, corn, and water. Bring to a boil and simmer for fifteen minutes.
  4. 4 Add greens and cook for five more minutes until wilted and tender.
  5. 5 Season with salt, stir well, and serve as a complete meal or with ugali.
