1 cup cooked red beans

1 cup corn kernels

2 cups chopped spinach or amaranth greens

1 onion, diced

2 tomatoes, chopped

1 tbsp vegetable oil

1 tsp salt

2 cups water
Instructions

Heat oil in a large pot and sauté onion for five minutes until softened.

Add tomatoes and cook for three minutes until broken down.

Add cooked beans, corn, and water. Bring to a boil and simmer for fifteen minutes.

Add greens and cook for five more minutes until wilted and tender.

Season with salt, stir well, and serve as a complete meal or with ugali.
