The Story Behind Ikinyiga

Sweet potatoes arrived in Africa through Portuguese traders in the sixteenth century and found ideal growing conditions in Rwanda's volcanic highlands. They quickly became essential to food security because they produce reliable yields even in poor soils. The recent introduction of orange-fleshed varieties by agricultural programs has added nutritional value without changing the beloved simple preparation that Rwandans have enjoyed for generations.
