Green plantains simmered with tomatoes, onions, and vegetables in a hearty one-pot stew that is a staple of everyday Rwandan cooking.

Ingredients

  • 4 green plantains, peeled and cubed
  • 2 onions, diced
  • 3 tomatoes, chopped
  • 2 carrots, sliced
  • 1 cup green beans, trimmed
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 3 cups water

Instructions

  1. 1 Heat oil in a large pot and cook onions for five minutes until softened.
  2. 2 Add tomatoes and cook for three minutes until they form a thick sauce.
  3. 3 Add cubed plantains, carrots, green beans, salt, and water. Stir to combine.
  4. 4 Bring to a boil, then reduce heat and simmer covered for thirty minutes until plantains are tender and sauce has thickened.
  5. 5 Stir gently to avoid breaking the plantains. Serve hot in deep bowls.
