Romanian Beef Stew

A rich, rustic stew of tender beef chunks in a paprika-tomato sauce, crowned with a fried egg and served over golden mămăligă.

Ingredients

  • 600g beef chuck, cubed
  • 2 tbsp sunflower oil
  • 1 large onion, diced
  • 3 tbsp tomato paste
  • 2 tsp sweet paprika
  • 1 tsp hot paprika
  • 200ml beef broth
  • 100ml dry red wine
  • 4 eggs
  • 100g brânză or feta cheese
  • Salt, pepper
  • Fresh thyme

Instructions

  1. 1 Brown beef cubes in batches in hot oil in a heavy skillet. Remove and set aside.
  2. 2 Sauté onion in the same skillet until softened. Add sweet and hot paprika, stir 30 seconds.
  3. 3 Add tomato paste and wine, scraping up browned bits. Simmer 2 min.
  4. 4 Return beef to skillet, add broth. Cover and simmer on low for 1.5 hours until very tender.
  5. 5 Fry eggs sunny-side up in a separate pan.
  6. 6 Serve stew over mămăligă, topped with a fried egg and crumbled brânză.
