Ingredients

  • 500g ground beef
  • 1/2 cup corn flour
  • 8 cups water
  • 2 tomatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 bunch parsley
  • 1 bunch scallions
  • 1 tsp cumin
  • Salt and pepper
  • Fresh cilantro

Instructions

  1. 1 Crumble ground beef into cold water in a large pot. Stir to separate the meat — this is the key technique.
  2. 2 Add onion, garlic, bell pepper, and tomatoes. Bring to a boil over medium heat, stirring occasionally.
  3. 3 Mix corn flour with a little cold water to make a slurry. Stir into the soup to thicken.
  4. 4 Simmer 20 min until flavors meld and soup thickens. Add cumin, salt, and pepper.
  5. 5 Stir in chopped parsley and scallions in the last 2 min.
  6. 6 Serve hot, garnished with cilantro.
