Fluffy white rice stirred with generous amounts of melted Paraguayan cheese until stretchy and golden — the simplest and most comforting of Paraguay's cheese-based staples.

Ingredients

  • 2 cups cooked white rice
  • 200g Paraguayan cheese (or Muenster), cubed
  • 2 tbsp butter
  • Salt to taste
  • Scallion, chopped (optional)

Instructions

  1. 1 Cook rice as normal. While still hot, add butter.
  2. 2 Stir in cubed cheese immediately. Mix vigorously as the cheese melts into the rice.
  3. 3 Continue stirring until the cheese is fully melted and the rice becomes stretchy and cohesive.
  4. 4 Season with salt. Add scallion if desired.
  5. 5 Serve immediately while the cheese is still stretchy and gooey.
