Ingredients

  • 4 ripe cooking bananas, sliced into rounds
  • 1/2 cup small tapioca pearls, soaked 30 minutes
  • 2 cups coconut milk
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup shredded coconut for garnish

Instructions

  1. 1 Soak tapioca pearls in water for 30 minutes, then drain.
  2. 2 Bring coconut milk, sugar, salt, and vanilla to a gentle simmer in a saucepan.
