Ripe plantains baked in a syrup of brown sugar, cinnamon, butter, and lime until deeply caramelized and glistening — an irresistible Panamanian dessert.

Ingredients

  • 4 very ripe plantains (black skin)
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1 cinnamon stick
  • Juice of 1 lime
  • 1/2 cup water
  • Pinch of salt

Instructions

  1. 1 Peel plantains and halve lengthwise. Place in a buttered baking dish.
  2. 2 Combine brown sugar, butter, water, cinnamon, lime juice, and salt in a saucepan. Heat until sugar dissolves.
  3. 3 Pour syrup over plantains.
  4. 4 Bake at 180°C (350°F) for 30-40 min, basting occasionally, until plantains are soft and syrup is thick.
  5. 5 Let cool slightly — they are best warm, not hot.
  6. 6 Serve as dessert or alongside savory dishes.
