Ingredients
500g fresh corvina or sea bass, diced small
Juice of 10 limes
1 red onion, finely diced
1 aji chombo pepper, seeded and minced
1/2 cup cilantro, chopped
1 celery stalk, finely diced
Salt and pepper
Saltine crackers for serving
Instructions
1Dice fish into 1cm cubes. Place in a glass bowl.
2Pour lime juice over fish, ensuring all pieces are submerged. Refrigerate 30-45 min.
3Drain most of the lime juice. Add red onion, aji chombo, cilantro, and celery.
4Season with salt and pepper. Toss gently.
5Serve immediately in chilled bowls with saltine crackers.
