Tapioca in Coconut Cream

Tapioca pearls cooked in sweetened coconut cream until translucent and pudding-like.

Ingredients

  • 1/2 cup small tapioca pearls
  • 2 cups coconut milk
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 cup water
  • Coconut cream for topping
  • 1/4 tsp cinnamon

Instructions

  1. 1 Soak tapioca in water 30 minutes.
  2. 2 Drain and add to pot with coconut milk.
  3. 3 Add sugar and salt.
  4. 4 Simmer, stirring often, 20 minutes until translucent.
  5. 5 Stir in vanilla.
  6. 6 Serve warm or chilled with coconut cream.
