Palauan Taro Pudding

Grated taro mixed with coconut cream and baked in banana leaves. A dense, starchy traditional food.

Ingredients

  • 1kg taro, grated
  • 1 cup coconut cream
  • 1/2 tsp salt
  • Banana leaves
  • 1 tbsp coconut oil
  • 1/4 cup grated coconut
  • 1 onion, diced
  • 1 tsp sugar

Instructions

  1. 1 Grate taro finely.
  2. 2 Mix with coconut cream, salt, and sugar.
  3. 3 Stir in grated coconut and onion.
  4. 4 Line pan with banana leaves.
  5. 5 Pour mixture in and smooth top.
  6. 6 Bake at 180C for 1 hour until firm.
