Colorful parrotfish grilled whole over coals with lime and salt. A beautiful reef-to-plate dish.

Ingredients

  • 1 whole parrotfish (500g)
  • 2 limes, juiced
  • Salt and pepper
  • 1 tbsp coconut oil
  • 2 cloves garlic, crushed
  • 1 green onion, sliced
  • Banana leaf
  • 1 hot pepper

Instructions

  1. 1 Score fish on both sides.
  2. 2 Rub with lime, garlic, salt, and pepper.
  3. 3 Brush with coconut oil.
  4. 4 Grill over coals 7 minutes per side.
  5. 5 Garnish with green onion and hot pepper.
  6. 6 Serve on banana leaf.
