Breadfruit Simmered in Coconut Milk

Chunks of breadfruit cooked in coconut milk until soft and creamy. A comfort side dish.

Ingredients

  • 1/2 breadfruit, peeled and cubed
  • 2 cups coconut milk
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 tbsp butter
  • Lime juice
  • 1 pandan leaf
  • 1/4 cup coconut cream

Instructions

  1. 1 Peel and cube breadfruit.
  2. 2 Place in pot with coconut milk and pandan.
  3. 3 Add salt and sugar.
  4. 4 Simmer 20 minutes until breadfruit is soft.
  5. 5 Stir in butter.
  6. 6 Serve with coconut cream drizzle.
