Omani Vegetable Curry

A vibrant, tomato-based stew loaded with seasonal vegetables and fragrant with bzar spices. The everyday Omani curry that fills kitchens with warmth and aroma.

Ingredients

  • 2 onions, diced
  • 3 tomatoes, diced
  • 2 potatoes, cubed
  • 1 eggplant, cubed
  • 1 zucchini, sliced
  • 2 carrots, diced
  • 3 tbsp tomato paste
  • 2 tbsp bzar spice
  • 1 tsp turmeric
  • 3 tbsp vegetable oil
  • 2 dried limes
  • Salt to taste
  • Fresh cilantro

Instructions

  1. 1 Saute onions in oil until golden. Add bzar and turmeric, stir for 1 minute.
  2. 2 Add tomato paste and fresh tomatoes. Cook until sauce thickens.
  3. 3 Add all vegetables, dried limes, and enough water to create a stew. Season with salt.
  4. 4 Simmer for 25-30 minutes until vegetables are tender and flavors meld.
  5. 5 Garnish with fresh cilantro and serve with white rice.
