Omani Spiced Rice with Meat

Fragrant basmati rice cooked with tender meat, dried limes, and a rich Omani spice blend called bzar. The national rice dish of Oman, loved at every gathering and family meal.

Ingredients

  • 1kg lamb or chicken
  • 3 cups basmati rice, soaked
  • 3 onions, sliced
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 dried limes (loomi)
  • 2 tbsp bzar spice mix
  • 1 tsp turmeric
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 3 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro
  • Fried onions and raisins for garnish

Instructions

  1. 1 Brown meat in oil with sliced onions until golden. Add garlic, bzar, turmeric, cinnamon, and cardamom.
  2. 2 Add tomatoes, dried limes, and enough water to cover. Simmer until meat is tender, about 1 hour.
  3. 3 Remove meat and strain broth. Cook soaked rice in the seasoned broth until fluffy.
  4. 4 Layer rice on a platter, top with meat, garnish with fried onions, raisins, and cilantro.
