Dense, aromatic saffron and cardamom fritters with a crackly exterior and soft interior. These golden treats are a hallmark of Omani celebrations and Eid festivities.

Ingredients

  • 2 cups rice flour
  • 1/2 cup all-purpose flour
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup water
  • 1 tsp ground cardamom
  • Pinch of saffron dissolved in 1 tbsp rosewater
  • 1 tsp baking powder
  • Oil for deep frying

Instructions

  1. 1 Mix rice flour, all-purpose flour, sugar, and baking powder.
  2. 2 Beat eggs and add water, saffron-rosewater mixture, and cardamom. Combine wet and dry ingredients.
  3. 3 Rest batter for 15 minutes.
  4. 4 Heat oil to 170C. Drop spoonfuls of batter and fry until deep golden, about 4-5 minutes.
  5. 5 Drain and cool slightly. Serve with Omani coffee.
