Ingredients

  • 200g lingonberries (fresh or frozen)
  • 1 egg white
  • 100g sugar

Instructions

  1. 1 Combine lingonberries, egg white, and sugar in a large bowl.
  2. 2 Beat with an electric mixer on high speed for 10-15 minutes until the mixture triples in volume and becomes fluffy and pink.
  3. 3 The cream should hold stiff peaks and have a mousse-like texture.
  4. 4 Spoon into serving glasses and serve immediately, or chill briefly.
