Norwegian Cream Cake

Layered sponge cake soaked in fruit juice, filled with custard and whipped cream, decorated with fresh berries. The Norwegian celebration cake.

Ingredients

  • 4 eggs
  • 200g sugar
  • 200g flour
  • 1 tsp baking powder
  • 100ml fruit juice for soaking
  • 500ml heavy cream
  • 3 tbsp sugar for cream
  • 300g fresh strawberries
  • 200g custard or vanilla cream

Instructions

  1. 1 Beat eggs and sugar until very thick and pale, about 10 minutes. Fold in flour and baking powder gently. Bake at 175C for 25-30 minutes. Cool completely.
  2. 2 Slice sponge horizontally into 3 layers. Drizzle each layer with fruit juice.
  3. 3 Spread custard on bottom layer, top with sliced strawberries. Add middle layer, spread with whipped cream and more berries.
  4. 4 Place top layer, cover entire cake with whipped cream. Decorate with whole strawberries and additional berries.
