The Story Behind Bløtkake
Blotkake is Norway's definitive celebration cake, appearing at every birthday, confirmation, wedding, and most importantly on May 17th, Norwegian Constitution Day. The name means soft cake, referring to the juice-soaked sponge layers.
The cake became the national celebration standard in the early 20th century as refrigeration made whipped cream cakes practical for home bakers. The combination of light sponge, custard, cream, and fresh berries creates a cake that is impressively beautiful yet not overly sweet.
The May 17th blotkake tradition is so strong that bakeries across Norway take orders weeks in advance, and families compete for the most beautiful decoration. Norwegian flags, red-white-and-blue berries, and marzipan decorations are common.
