Mixed Vegetable and Meat Casserole

A generous oven-baked casserole layering seasoned lamb or veal with potatoes, peppers, tomatoes, and eggplant in a rich paprika-scented sauce.

Ingredients

  • 500g lamb shoulder, cubed
  • 2 potatoes, sliced
  • 2 red peppers, sliced
  • 1 eggplant, cubed
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 3 cloves garlic
  • 2 tbsp paprika
  • 100ml sunflower oil
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1 Season lamb with paprika, salt, and pepper.
  2. 2 Layer potatoes on the bottom of an oiled baking dish.
  3. 3 Add layers of lamb, onion, peppers, eggplant, and tomatoes.
  4. 4 Drizzle with oil, add garlic, and pour in 200ml water.
  5. 5 Cover with foil and bake at 180°C for 1.5 hours.
  6. 6 Remove foil and bake 20 min more until golden on top.
