Cold Yogurt and Cucumber Soup

An ice-cold, creamy soup of strained yogurt, grated cucumber, garlic, and walnuts — the perfect Macedonian summer refresher.

Ingredients

  • 500ml thick yogurt
  • 2 cucumbers, grated
  • 3 cloves garlic, crushed
  • 30g walnuts, crushed
  • 2 tbsp olive oil
  • 200ml cold water
  • Salt
  • Fresh dill

Instructions

  1. 1 Grate cucumbers and lightly salt. Squeeze out excess water.
  2. 2 Mix yogurt with cold water until smooth.
  3. 3 Add cucumbers, crushed garlic, and walnuts.
  4. 4 Drizzle with olive oil and season with salt.
  5. 5 Refrigerate at least 1 hour. Serve garnished with dill.
