Tender chunks of chicken and mushrooms baked in a clay pot with peppers, onions, and melted kashkaval cheese.

Ingredients

  • 500g chicken thighs, cubed
  • 200g mushrooms, sliced
  • 1 onion, sliced
  • 2 peppers, sliced
  • 2 tomatoes, diced
  • 100g kashkaval cheese, sliced
  • 2 tbsp oil
  • 1 tsp paprika
  • Salt and pepper

Instructions

  1. 1 Sear chicken in oil until browned. Season with paprika, salt, and pepper.
  2. 2 Add onion, peppers, and mushrooms to the pot. Cook 5 min.
  3. 3 Add tomatoes and 100ml water. Transfer to a clay pot.
  4. 4 Top with slices of kashkaval cheese.
  5. 5 Bake at 200°C for 25-30 min until cheese is melted and golden.

The dish is named "village meat" because it originated in rural Macedonian homes where everything available went into the clay pot.
