Stuffed Bell Peppers

Sweet bell peppers stuffed with a savory mix of rice and ground beef, simmered in tomato sauce until tender and bursting with flavor.

Ingredients

  • 6 large bell peppers
  • 400g ground beef
  • 150g rice
  • 1 onion, grated
  • 2 tbsp paprika
  • 400ml tomato passata
  • 2 tbsp oil
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1 Cut tops off peppers and remove seeds.
  2. 2 Mix beef, rice, onion, paprika, parsley, salt, and pepper.
  3. 3 Stuff peppers firmly and replace tops.
  4. 4 Stand peppers upright in a pot.
  5. 5 Pour passata and 200ml water around them.
  6. 6 Cover and simmer on low 1 hour until rice and meat are cooked.

Did You Know?

Macedonian cooks save the pepper tops and place them back on like little hats, which helps steam the filling inside.
