Kompir Mandza

A homey, paprika-rich potato stew simmered until thick and velvety, pure Macedonian comfort in a bowl.

Ingredients

  • 1kg potatoes, cubed
  • 1 onion, diced
  • 2 tbsp paprika
  • 2 tbsp oil
  • 2 tbsp tomato paste
  • 1L water
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1 Sauté onion in oil until soft.
  2. 2 Add paprika and stir 30 seconds.
  3. 3 Add tomato paste and potatoes, stir to coat.
  4. 4 Pour in water and bring to a boil.
  5. 5 Simmer 30-35 min until potatoes are very tender and stew has thickened.
  6. 6 Garnish with parsley and serve.
